Aloo Puri
Ingredients
2Cup of Semolina (Rava)
1 Large Potato
2 Table spoon Wheat flour
Salt as per taste
pepper as per taste
1 green chilly
Coriander leaves
Water as required
Making Puri Dough
1. First Boil the potato
2. In a bowl smash the boiled potato add Semolina (Rava) ,wheat flour, salt, pepper, chopped green chilly coriander leaves and water as required and mix it till it forms a firm dough.
3. Make small balls of the dough divide it into 5 to 6 portions .
4. Smoothen all the balls by rolling them lightly between your palms. Avoid kneeding them
Rolling Puri
1. Sprinkle little flour on the rolling area
2. Place the ball on the rolling area flatten it and sprinkle little flour over it.
3. Begin to roll it evenly from center to a round puri . It should be moderately thick so that it helps puri to puff
4. Begin to heat the oil and make rest of the puris.
Frying Puri
1. The oil has to be hot enough. Check it by dropping a small portion of dough in the pan, it has to rise immediately without browning
2. Drop the puri carefully and do not disturb it till it rises up half way.
3. Quickly gently press it with perforated ladle. This helps puri to puff.
4. Once the Puri puffs flip it and fry other side till it become golden and crisp
5. Remove the puri in a kitchen tissue so that it soaks the extra oil.
